Mom’s tourtiere
This recipe is all Mom’s, and nothing makes me happier than when I eat this. We have it every Christmas, but I’d have it every day if I could.
Ingredients
1 pound lean ground pork
1/2 pound lean ground beef
1 large onion, finely chopped
1 clove garlic, finely chopped
1 1/2 teaspoon poultry seasoning
1 teaspoon, salt
1/2 teaspoon celery salt
1 teaspoon pepper
1/2 teaspoon ground sage
1/2 cup water
2 medium sized potatoes cooked and mashed.
1 package of pre-made pie crust (Mom doesn’t cheat, but I do, you can do what you want of course)
Instructions
Combine pork, beef , onion and garlic in very large frying pan or dutch oven. Cook stirring often until meat loses pink colour.
Stir in poultry seasoning, salt ,celery salt, pepper ,sage and water; cover. Simmer 20 mins, uncover, simmer 10 minutes longer. Remove from heat, stir in mashed potatoes, cool.
Prepare pie crust. Spoon cooled mixture into pie shell. Fold edge over meat, brush with beaten egg or a water/flour mix to help seal the crust.
Roll top crust, place over meat, trim flush with side of pie plate. Cut small slits near centre for steam to escape. Brush top with egg. Cut fancy shapes to trim top.
Bake in hot oven 425 [400 glass] for 15 mins., lower heat to 350 [325 glass] bake 25 mins. longer or until pastry is golden brown. Cool on rack. Best served slightly warm.
