Curried Basmati Rice
Takes a little time to make, but it’s actually really easy.
2 tablespoons margarine or butter
1 cup finely chopped onion
2 garlic cloves, minced
1 1/2 cups uncooked white basmati rice
1 teaspoon turmeric
1/2 teaspoon garam masala
1/2 teaspoon salt
2 (10 1/2-ounce) cans low-salt chicken broth
1/2 cup water
Melt margarine in a saucepan over medium heat. Add onion and garlic; sauté 5 minutes. Add rice, turmeric and garam masala; cook 1 minute, stirring constantly. Add salt, broth, and water, and bring to a boil. Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed.
Remove from heat, let stand, covered, 10 minutes; fluff with a fork.
